Managing allergens in delivery: your legal obligations

Regulations regarding allergens also apply to delivery. The 14 major allergens must be declared for each dish, whether served in the restaurant or to go. Failure to comply with this obligation may result in criminal liability.

On platforms, you can (and should) indicate allergens in the descriptions of dishes. Uber Eats and Deliveroo offer dedicated fields to list the allergens present in each item. Fill them systematically.

Create a technical sheet for each dish that lists all ingredients and associated allergens. This sheet must be updated with every change in recipe or supplier, as compositions may vary.

Train your team to handle specific requests. A client who indicates an allergy in the order notes must be taken seriously. Check the possibility of preparing the dish without the allergen in question, or contact the client to propose an alternative.

In the event of an allergic reaction following a delivery, you are liable if the allergen was not declared or if the customer’s request was not honored. Document your procedures and retain proof of your team’s training.
