Managing allergens in delivery: protecting your clients and your business

In France, 3 to 4% of the population suffers from food allergies. Delivery carries an increased risk because the customer cannot ask the server questions. The restaurant’s responsibility is complete.

The 14 major allergens must be declared on each dish: gluten, crustaceans, eggs, fish, peanuts, soy, milk, tree nuts, celery, mustard, sesame, sulfites, Lupin, mollusks.

On platforms, systematically fill out the allergen fields for each article. If a dish may contain traces of an allergen (cross-contamination), indicate it as well.

Create an internal document with the allergens of each dish. Display it in the kitchen. When a customer adds a comment “gluten-free” or “peanut allergy”, the team must know exactly what to do.

In case of an order with an allergy mention in the comments, verify EACH ingredient. In case of doubt, contact the customer via the platform or cancel the order. It’s better to cancel than an allergic incident.

Professional liability insurance must cover incidents related to allergens. Verify your contract and keep a record of your compliance (allergen sheets, procedures).

In the event of an incident (reported allergic reaction), do not neglect: immediately contact your insurance, document everything, and cooperate with health authorities if necessary.
