The 8 performance indicators to follow in delivery

Data-driven management is the differentiating factor between restaurants that stagnate and those that progress in delivery. Here are the 8 KPIs to follow.

KPI 1: Weekly delivery revenue. Track the trend, not the absolute number. A 5% monthly growth is a good pace.

KPI 2: Average basket. Objective: 20-30 EUR depending on your range. If it decreases, check your offers, your suggestions, and your prices.

KPI 3: Repeat order rate. Target: 25-35%. Below this, you have a quality or coherence issue.

KPI 4: Average preparation time. Objective: respect your estimates within +/- 2 minutes. Each minute of delay impacts your score.

KPI 5: Recovery rate. Target: less than 2%. Above this, identify the main cause and correct it.

KPI 6: Average score. Goal: 4.3+ across all platforms. Track weekly evolution.

KPI 7: Cancellation rate. Objective: less than 1%. Cancellations are a sign of a stock or process problem.

KPI 8: Net margin per order. Target: above 15%. Calculate it monthly, including all costs (ingredients, packaging, commission, allocated labor).
