His style, his philosophy, his “attitude.” Create a character. The purist chef, the rock’n’roll chef, the grandma-cake chef.
Take him out of the kitchen. Have him greet clients in the dining room. Have him talk on Story.
Label the dishes. “Mike’s Burger” has more character than “The Chef’s Burger.”
Pay attention to the departure. If everything relies on the head chef and he leaves, the restaurant collapses. The restaurant brand must be stronger than the chef’s brand, unless the chef is the owner.
