Paper: Simple, inexpensive, durable, one can write on it, and affix it to a document. But it gets lost, dirtied, falls, and one doesn’t know how long it’s been there.
The screen (KDS): Provides the precise timing (“Waiting for 12 min” in red). Allows sorting by dish (e.g., “Launch 4 burgers together” even if they are different orders). Eco-friendly (no rolls).
The disadvantage of the KDS: a screen failure paralyzes the kitchen. There must always be a backup printer. The greasy screen is difficult to clean.
The KDS also allows you to measure performance: “Average plate turnaround time: 8 min”. Impossible with paper.
