Smash Burger: why does it crush the gourmet burger

The principle: A meatball violently smashed onto a scorching hot griddle (>250°C).

Crispy caramelized crust (Maillard) and juicy interior. Very quick cooking (2 min).

Simplicity: Potato Bun (soft), meat, American cheese, pickles, onions, sauce. No tomato salad that wets the bread.

Profitability: Smaller meat portions (2x80g often) but perceived as generous. Express cooking = huge throughput.

Brands like Dumbo, Blend, and PNY started the trend, and now it’s the standard.
