The “healthy” segment is the most dynamic in delivery. Searches for “salad,” “bowl,” “vegan,” and “healthy” are increasing by 25 to 35% each year on the platforms.
The definition of “healthy” is broad: low calories, lots of vegetables, gluten-free, vegan, high in protein, organic… Define YOUR version of healthy based on your cuisine and your clientele.
Formats that work: bowls (base + protein + toppings + sauce), salads composed, wraps, poke bowls. They are easy to prepare, travel well, and allow for a great variety.
Nutritional balance is a selling point. Indicate the calories, proteins, and key nutrients on the platforms. Customers concerned about their diet are looking for this information.
The profit margins on healthy dishes are often excellent. The food cost of a composed salad (2-3 EUR) for a selling price of 10-13 EUR is much better than that of a burger.
Test 3-5 healthy dishes to add to your existing menu. If the demand is there, expand the range. If your clientele isn’t receptive, adjust without making a massive investment.
