Poke (Hawaiian raw marinated fish) has been Westernized (vinegared rice, avocado, mango, edamame).
He replaced the lunchtime sushi: cheaper to produce (no sushi master), faster (assembly), healthier and more colorful (Instagram).
The market is saturated. There’s a Poké place on every corner.
The future: diversification (Poké chaud, Chirashi, Donburi) and quality (real sustainable fish vs low-grade farmed salmon). Only strong brands (Pokawa) and very high-quality independents will survive.
