Clientele: remote work (40%), offices (30%), weekend morning rushes (30%). Each segment has different needs but one common point: they want a quality breakfast without leaving home.
The ideal menu: 8-12 simple items. Pastries, pancakes/crepes, eggs (scrambled, Benedicts), avocado toast, fruit bowls, granola, fresh juices, coffee and tea.
Packaging is critical: hot beverages require leak-proof insulated cups. Pastries must be protected from crushing. Invest in good containers.
The margins are excellent: the food cost for a pancake is 0.50-0.80 EUR for a selling price of 6-8 EUR. Hot beverages also have a high margin.
Launch the breakfast service gradually: first on weekends (brunch, 10am-1pm), then during the week (7:30am-10am) if the volume justifies it.
