Between 10 PM and 2 AM, 60% of restaurants close on platforms. However, demand remains strong: students, night workers, parties. It’s a niche market with little competition.
Nighttime baskets are, on average, 15% higher than evening baskets. Customers order more generously and are less price-sensitive after a certain time.
Adapt your nighttime menu: simplify it. 10 to 15 items should suffice. Focus on quick dishes to prepare with readily available ingredients (burgers, wraps, pizzas, kebabs).
The night team can be reduced: a cook and a packer are sufficient to handle 5 to 10 orders per hour. The revenue-to-payroll ratio is often better than during the evening rush.
Security is a point of attention. Make sure your area is accessible to delivery drivers at night. Adequate lighting and a clear delivery procedure will prevent problems.
Test overnight delivery for one month on a single platform. If the volume justifies the costs (electricity, salaries), expand to other platforms.
