In traditional service, dishes are served when they are ready and the server brings them. In delivery, all elements of an order must be ready at the same time. This shift in paradigm requires a different workflow.
Organize your kitchen into linear stations: order receipt > preparation > cooking > assembly > packaging > delivery handover. Each stage has a dedicated physical space.
The assembly station is the heart of the delivery workflow. It’s where all elements converge. It must be spacious, well-lit, and equipped with everything necessary (containers, sauces, cutlery, bags).
Use a color system to identify orders: blue for Uber Eats, green for Deliveroo, yellow for Just Eat. This avoids confusion during rush hour.
FIFO (First In, First Out) is the golden rule. The first order received is the first served. No exceptions, even if an order seems simpler. Exceptions create chaos.
Track your prep times by dish type. A burger takes 8 minutes, a salad takes 4 minutes, and a dessert takes 2 minutes. This data allows you to accurately estimate your prep times on the platforms.
