Optimal preparation time on Uber Eats: finding the right balance between speed and quality

On Uber Eats, the prep time is one of the most important parameters of your profile. It influences both search results ranking (restaurants “fast” are highlighted), the estimated delivery time to the customer (which conditions their satisfaction), and delivery driver management (too short a time can generate expectations in front of your kitchen). Finding the right balance is an exercise that requires rigor and real data.

The first step is to measure your actual preparation time. For one week, time each order from receipt to the moment you press “Order Ready.” Categorize by dish type, order size, and time of day (lunch, dinner, weekend). You will likely find that your actual time is very different from what you declared on the platform. Most restaurateurs underestimate their preparation time by 5 to 8 minutes.

The ideal preparation time to declare is your median time plus a 20% safety margin. If your median time measurement is 18 minutes, declare 22 minutes. This approach allows you to deliver “ahead of schedule” in 50% of cases, which naturally generates positive reviews mentioning speed. Being consistently on time also reduces the stress of your kitchen team and errors related to rushing.

Adjust your display time according to the periods. Uber Eats allows you to modify your preparation time during service. During peak times (Friday evening, Sunday lunchtime), don’t hesitate to increase your display time by 5 to 10 minutes. It’s better than a customer waiting 15 minutes longer than expected and leaving a negative review. Some restaurants have implemented a systematic modification routine: normal time during the week, time increases on weekends.

The impact on algorithmic positioning is real, but nuanced. Uber Eats favors restaurants with a good ratio of “promised time / actual time.” A restaurant that promises 25 minutes and delivers in 23 will be better ranked than a restaurant that promises 15 minutes and delivers in 22. The algorithm measures your reliability, not just your speed. This is an important distinction that many restaurateurs miss.

To reduce your actual preparation time, work on setting up and preparing partial orders. Having your pre-weighed ingredients, ready sauces, and packaging within reach can save 3 to 5 minutes per order.
