A client experiences an allergic reaction: who is responsible?

If the client hasn’t said anything: The restaurateur isn’t a mind reader. Unless the allergen was supposed to be displayed (list of 14) and wasn’t.

If the client has notified: The restaurateur has a duty of result. If he agrees to serve, he guarantees the absence of the allergen.

Service error: The server switches the plates. Restaurant responsibility.

Fortuitous presence (traces): If you have displayed “May contain traces of…”, you are covered. Otherwise, it’s risky.

Client Allergy Procedure (Chef alerted, cleaning station, validation before sending).
