Setup is the foundation of everything. Before each service, prepare all ingredients, sauces, and garnishes. Use standardized containers and clearly label each station. Every second gained in setup translates into minutes saved during the rush.
Restructure your production line to minimize movement. The packaging station should be adjacent to the finishing station. Delivery containers should be within easy reach, pre-opened and stacked in the order of use.
Use a clear ticketing system with a KDS (Kitchen Display System) screen instead of paper tickets. The digital display allows for prioritizing orders, seeing the elapsed time, and anticipating upcoming preparations.
Organize your team to work in parallel rather than sequentially. While one chef prepares the main course, another can already package the appetizer and prepare the side dishes. This parallelization significantly reduces the total time.
